Mozzarella Living Salad
Throw together a simple salad lunch in moments, perfect for a summer's day
1 pack living baby leaf lettuce
125g Mozzarella pearls or one large ball
10 cherry tomatoes
5 spring onions
Handful of roasted pumpkin seeds
100g Parmesan cheese
1. Scatter living salad leaves across two plates
2. Intersperse leaves with pearls of mozzarella or pieces ripped from a large ball.
3. Halve the tomatoes and finely slice the spring onions. Scatter through the leaves.
4. Drizzle with olive oil and sprinkle with parmesan shavings, roasted pumpkin seeds and freshly ground pepper
