Watercress, quinoa and pomegranate salad

Serves 4

Watercress is packed full of antioxidants and this beautiful salad is perfect for a healthy lunch. Quinoa is everywhere at the moment, giving you protein while the jewel-like pomegranate seeds give a sweet surprise when you tuck in.

Ingredients:

1 tray Living Salads baby watercress
1 pack ready cooked quinoa
Seeds from 1 pomegranate
1 spring onion, sliced at an angle
Juice of 1 lemon
3tbsp extra virgin olive oil
2tbsp honey
Salt and pepper to season

Method

1. Cut the watercress, wash and set aside.
2. De-seed the pomegranate.
3. Prepare the dressing by mixing the lemon juice, olive oil and honey together in a medium sized bowl and season well with salt and pepper.
4. Add the quinoa, spring onion, watercress and pomegranate to the dressing and serve.
